Hungry Girl Lisa Lillien Shares Her Recipes With Big Morning Buzz Fans

Today on Big Morning Buzz Live, Hungry Girl author and Food Network star Lisa Lillien was on hand to cook some of her healthy, tasty treats for Carrie Keagan and Jason Dundas. Lillien shared some of her favorite recipes with us and we just wanted to pass them along — because everyone needs to drink a “My So-Called Latte” once in a while, if only for the name. All recipes are after the jump!

Yum Yum Brownie Muffins
PER SERVING (1 muffin): 181 calories, 3.5g fat, 357mg sodium, 37g carbs, 2g fiber, 20g sugars, 2g protein
Ingredients:
One 18.25-oz. box devil’s food cake mix
One 15-oz. can pure pumpkin (NOT pumpkin pie mix; Libby’s is best)
Directions:Preheat oven to 400 degrees. Pour cake mix into a large bowl and whisk to remove any lumps. Add pumpkin and stir until completely smooth and uniform. Don’t add any other ingredients that may be mentioned on the cake mix box, like eggs, oil, or water. The mixture will be very thick, so you might be tempted to add in other things to make the batter thinner. Do not do this!

Evenly distribute batter into a 12-cup muffin pan lined with foil baking cups and/or sprayed with nonstick spray. Place pan in the oven and bake until a toothpick inserted into the center of a muffin comes out clean, about 20 minutes.Allow to cool slightly and then serve! MAKES 12 SERVINGS

Fettuccine Hungry Girlfredo
PER SERVING (entire recipe): 99 calories, 4g fat, 376mg sodium, 9.5g carbs, 4g fiber, 1g sugars, 5.5g protein

Ingredients: 1 package House Foods Tofu Shirataki Fettuccine Shaped Noodle Substitute (refrigerated; found in the tofu section)
1 wedge The Laughing Cow Light Creamy Swiss cheese
2 tsp. reduced-fat Parmesan-style grated topping
1 tsp. fat-free sour cream
Optional: salt and black pepper

Directions: Use a strainer to rinse and drain shirataki noodles well. Pat dry. In a microwave-safe bowl, microwave for 1 minute. Dry as thoroughly as possible, using paper towels. Cut noodles up a bit, using kitchen shears or a knife.

Add cheese wedge, grated topping, and sour cream, breaking the cheese wedge into pieces as you add it. Microwave for 1 minute.
Stir well and, if you like, season to taste with salt and pepper. Enjoy! MAKES 1 SERVING

HG Alternative! This recipe could also be prepared in a skillet on the stove, over medium-high heat, until hot and well mixed.

Slaw & Order
PER SERVING (1/2 of recipe, 1 heaping cup): 148 calories, 3g fat, 610mg sodium, 24.5g carbs, 6g fiber, 10g sugars, 8g protein
Ingredients:
One 12-oz. bag (4 cups) dry broccoli cole slaw
1 cup low-fat creamy tomato soup (like Amy’s Chunky Tomato Bisque) or canned crushed tomatoes
1 tsp. chopped garlic, or more to taste
Dash onion powder, or more to taste
Dash each salt and black pepper, or more to taste
Dash crushed red pepper, or more to taste
3 tbsp. reduced-fat Parmesan-style grated topping, divided

Directions: Bring a skillet sprayed with nonstick spray to medium-high heat on the stove. Add slaw and 1/4 cup water. Stirring occasionally, cook until water has evaporated and slaw has softened slightly, about 5 – 8 minutes.
Add soup/tomatoes, garlic, spices, and 2 tbsp. grated topping. Stir and continue to cook until hot, about 3 – 4 minutes.
Season to taste with additional spices, if you like. Top with remaining 1 tbsp. grated topping. Enjoy!
MAKES 2 SERVINGS

My So-Called Latte
PER SERVING (entire recipe): 29 calories, 1.5g fat, 92mg sodium, 2.5g carbs, 0.5g fiber, 0g sugars, 0.5g protein
Ingredients:
4 oz. brewed flavored coffee
4 oz. Unsweetened Vanilla Almond Breeze (usually found with shelf-stable boxed milk swaps)
2 packets no-calorie-sweetener (like Splenda)
Optional topping: Fat Free Reddi-wip

Directions: Add all ingredients to a microwave-safe mug and microwave for 45 seconds, until hot. Or serve it over lots of crushed ice. If you like, top with Reddi-wip. Enjoy! MAKES 1 SERVING

Too-EZ Mac ‘N Cheese
PER SERVING (1/4th of recipe, 1 heaping cup): 222 calories, 5.5g fat, 772mg sodium, 35g carbs, 6g fiber, 6g sugars, 8.5g protein

Ingredients:
4 1/2 oz. (about 2 cups) uncooked whole-wheat-blend or high-fiber rotini pasta (like the kind by Ronzoni)
24 oz. (about 6 cups) frozen Green Giant Cauliflower & Cheese Sauce
3 wedges The Laughing Cow Light Original Swiss cheese
Optional: salt and black pepper
Directions:In a large pot, prepare pasta according to the instructions on the package; drain well and set aside. While pasta is cooking, place contents of the cauliflower & sauce package in a large microwave-safe bowl. Cover and microwave until sauce has melted and cauliflower is hot, 10 – 12 minutes.

Once the bowl is cool enough to handle, remove it from the microwave and add cooked pasta. Unwrap cheese wedges and add those as well.

Mix thoroughly, ensuring that the cheese wedges are evenly distributed and the pasta and cauliflower are coated in cheese sauce. Season to taste with salt and pepper, if you like, and then enjoy! MAKES 4 SERVINGS
